Strawberry Salsa and Cinnamon Chips

3 Granny Smith apples
2 quarts strawberries
4 kiwis
1 T. fresh lime juice
1/2 C. brown sugar
3 T. apple jelly
10 large flour tortillas
Butter flavored cooking spray
2 T. of cinnamon
1 C. sugar

Coarsely chop the fruit. Mix lime juice, brown sugar and apple jelly. Toss with the fruit. Refrigerate until ready to use.

Cut each tortilla into 8 wedges. Mix cinnamon and sugar together. Spray a large baking sheet with cooking spray. Lay out tortillas on the baking sheet and spray. Sprinkle cinnamon/sugar mixture on chips. Bake at 350 for approximately 10-12 minutes, making sure not to burn. Repeat until all chips are baked.

Fresh Strawberry Cake

1 C. strawberries, diced
1 package white cake mix
1 3 oz. package strawberry gelatin
3 T. flour
¾ C. oil
¾ C. water
4 eggs
Cooking spray with flour

Strawberry Glaze:
1/3 C. strawberries, diced
¾ C. powdered sugar
2 T. butter, melted
1-3 T. milk (to desired consistency)

Preheat oven to 325ºF. Toss diced strawberries in a large mixing bowl with
Gelatin. Add remaining cake ingredients and beat on low speed for 1 minute; scrape sides of bowl. Beat on medium speed for 2 minutes; do not over mix. Mist bundt pan with cooking spray with flour. Pour batter into the pan and smooth out the top with
a spatula. Bake the cake until it is light brown about 45-50 minutes (toothpick should come out clean). Prepare glaze adding more milk as needed, mix on low until smooth (this will help break up the strawberries). Remove cake from oven and let cool in the pan for 10 minutes. Remove cake from pan and put on serving platter. Drizzle half of glaze over the cake while it is still warm slowly so that it doesn’t run totally off (I usually do this in shifts). Cool. Drizzle remainder of glaze on slices when serving.

Strawberry Salad

1 can strawberry pie filling
1 can pineapple tidbits, drained
1 can sweetened condensed milk
1 (8 oz.) container Cool Whip®
1 (8 oz.) container sour cream
1 C. small marshmallows
1 C. chopped pecans
1 C. red or green grapes or both
1 C. sliced strawberries

Combine all ingredients and chill overnight.
